เครื่องตรวจจับโลหะใช้เทคโนโลยีโดยสร้างสนามแม่เหล็กไฟฟ้าในบริเวณอุโมงค์ของตัวมัน และเมื่อวัตถุปนเปื้อนที่มีคุณสมบัติในการเหนี่ยวนำสนามแม่เหล็กหรือสนามไฟฟ้าได้ ซอร์ฟแวร์ของเครื่อง Metal Detector จะทำการประมวลผลและส่งข้อมูลไปยังผู้ใช้ให้รู้ว่ามีวัตถุโลหะปนเปื้อนเข้ามากับสินค้า อย่างไรก็ตามวัตถุที่สามารถเหนี่ยวนำสนามแม่เหล็กไฟฟ้าได้ไม่ได้มีแต่เฉพาะโลหะ แต่วัตถุดิบหรืออาหารบางชนิดมีคุณสมบัติที่ใกล้เคียงกับโลหะซึ่งสามารถเหนี่ยวนำไฟฟ้าได้เช่นกัน เช่น อาหารที่มีกรดและเกลือเป็นส่วนประกอบ เช่นพริก หรืออาหารแชาเย็นที่มีอุณหภูมิ 1-5 Celsius ดังนั้น เครื่องตรวจจับโลหะจึงต้องมีเทคโนโลยีที่ชาญฉลาดเพื่อแบ่งแยกระหว่างวัตถุที่เป็นโลหะ และวัตถุที่ไม่ใช่โลหะแต่มีคุณสมบัติในการนำไฟฟ้าได้ใกล้เคียงโลหะ
